1. Liver Kebab (Ciğer Kebabı) – The Breakfast of Champions

In Urfa, we eat liver for breakfast! Small cubes of lamb liver and tail fat are grilled over oak charcoal and served with fresh parsley, mint, and onions. Don’t be shy—eat it with your hands using the local lavaş bread!

2. Urfa Kebab vs. Adana Kebab

Urfa Kebab is the milder, more flavorful cousin of the spicy Adana Kebab. It focuses on the quality of the meat, hand-minced with a "Zırh" (large knife) to keep the juices inside.

3. Çiğ Köfte: The Original Story

Legend says Çiğ Köfte was invented here during the time of Prophet Abraham. It’s a mix of fine bulgur, high-quality meat, and the famous Isot pepper. Watching a master knead the dough is a performance in itself.

4. Isot: The Red Gold of Urfa

Isot is a unique local chili fermented under the sun until it turns almost black. It's smoky, sweet, and essential to Urfa's gastronomy. Make sure to buy some at the Spice Bazaar (Gümrük Hanı) before you leave!
